In a nutshell
The Fold8 Ultra is Samsung's camera foldable. It has an 8-inch inner screen, a 6.5-inch cover screen, a 200MP main camera and a 10MP 3x telephoto, at 4.1 mm thick open. The iPhone Duo answers with a 7.6-inch inner screen, IP68 protection, a titanium frame and iOS, but no telephoto.
The iPhone Duo suits you if you're staying on iPhone and want a foldable that shrugs off dust and water. The Galaxy Z Fold8 Ultra suits you if zoom, the biggest screens and a thinner body matter more.

Durability
The Duo is rated IP68 against the Ultra's IP48, and has a titanium frame. Both should get updates until around 2033.

Frame and glass:Grade 5 titanium and Ceramic Shield 2 on the Duo. Armour Aluminium and Gorilla Glass Ceramic 3 on the Ultra.
Software support:Samsung promises seven years of OS and security updates, to 2033. Apple doesn't publish a date, but expect around 2033 too.
